What is the Abashiri Moyoro Hot Pot?

This new local hot pot features a rich variety of Okhotsk seafood, including Okhotsk Salmon and minced flesh, that was created in Abashiri and boiled in a special pot that is similar to Okhotsk earthenware. Shiratori soy sauce is added to a salty soup using Okhotsk salt, and shellfish and vegetables produced in Abashiri are boiled in the soup. This hot pot is based on an image of the Moyoro people, the northern people who abruptly disappeared about 1,000 years ago.

The Okhotsk culture and the Moyoro people

A large number of ancient ruins were discovered on the left bank of the Abashiri River near the river mouth a little more than 90 years ago. Earthenware and remains which were quite different from the ruins of the culture of the indigenous people Ainu were discovered. The newly-discovered people and culture were named "Moyoro people" and "Moyoro Culture" and attracted attention in the archeological circles. As the ruins of the Moyoro Culture have been successively unearthed in various parts along the coast of the Okhotsk Sea, the people are now called "Okhotsk Culture people". They disappeared thousands of years ago, and the reason of their disappearance is unknown. But they must have been enjoying the rich food culture here in Okhotsk, thanks to delicious food gathered from the mountains and the sea. This certainly was a "southern paradise" for them, which they reached after chasing true seals in the sea full of drift ice.

Okhotsk Salmon is made tastier by the thick soup with butter and the rich taste emanating from the other ingredients. This thick, full-bodied soup contains the Japanese-style kombu dashi (kelp stock), umami of chicken produced in East Hokkaido, and a drop of butter. Please enjoy the exquisite tastes of minced flesh of Okhotsk Salmon and scallops which are made soft and creamy by raw cream, and Okhotsk Salmon which is salted and soaked in sake.

Okhotsk Salmon is made tastier by foods gathered from the mountains and the sea. "Pen shell" and "Conger pike" produced in Abashiri, whose catch is small but whose deliciousness no one would contest, and "potato dumplings" and "pumpkin dumplings", whose springy texture is very attractive. Ingredients unique to Abashiri emphasize the deliciousness of Okhotsk Salmon.

You will be excited to find the umami of Okhotsk Salmon enhanced by shellfish naturally raised in Lake Notoro and a heated stone. Deliciousness of naturally-grown shellfish, such as oysters (the original species of Lake Notoro), scallops and short-necked clams produced in Lake Notoro, is condensed. On top of that, a fiercely heated beach stone is thrown into the pot to enhance deliciousness of Okhotsk Salmon. This is a very wild hot pot.
